COOKED FUL (for Hummus-Ful)

Ingredients:

1 cup dried Ful (Egyptian fava beans)
1 clove of Garlic
1⁄2 tomato
1 tsp cumin
1⁄2 a lemon salt, pepper

Directions:

Soak the beans in water overnight, drain, wash and soak for two hours more.

Put in a medium-sided pot, cover with water and cook until soft boiling emerge. Cover the pot and and keep cooking over the smallest stove flame you have, until the ful begins to soften. It should take between 45 minutes to 1.5 hours, depending on your stove. The longer the better. If the water evaporates completely at some point, add more water.

Chop and add the tomato and garlic, and go on cooking until you get the desired texture. Just before, you can add the salt and cumin (which can also be added on top of the dish, but in a much smaller dosage).

PICO DE GALLO

Ingredients:

2 large tomatoes, diced
¼ yellow onion, chopped
1 large jalapeño
¼ cup of cilantro, finely chopped
½ Lemon or lime
Salt to taste

PICO DE GALLO

Ingredients:

2 large tomatoes, diced
¼ yellow onion, chopped
1 large jalapeño
¼ cup of cilantro, finely chopped
½ Lemon or lime
Salt to taste

Directions:

Start by washing all your vegetables. Place your jalapeño into a small pot and boil for 2 – 3 minutes, tops. You don’t want it to become too soft or mushy. It needs to be a little firm. Plus, the longer it cooks the hotter the salsa will be. When it’s cooled, chop the jalapeño into small cubes.

In a bowl combine your chopped vegetables and cilantro. Squeeze ½ a lemon or lime into the bowl. Add salt to taste. Mix all ingredients together and offer it as a side dish or enjoy it with some chips as a snack.

Here’s a great way to incorporate it into a meal:

Brown rice/quinoa
Black beans
Avocado slices
Pico de Gallo to top
